Description

Fig Tree Guest House is seeking a skilled and creative Kitchen ManagerĀ is responsible for overseeing all kitchen operations, ensuring high standards of food quality, hygiene, cost control, and staff management. This role ensures the kitchen runs efficiently, safely, and profitably while delivering consistent, high-quality meals to guests.

Responsibilities:

Kitchen Operations

  • Manage daily kitchen operations and workflow
  • Ensure all food is prepared and presented to agreed standards
  • Plan menus in collaboration with management or head chef
  • Ensure timely preparation for dine-in, takeaway, and events/conferences

Staff Management

  • Supervise, train, and motivate kitchen staff
  • Prepare staff duty rosters and manage attendance
  • Enforce discipline and maintain a positive working environment
  • Ensure staff follow hygiene and safety procedures

Stock & Cost Control

  • Order food supplies and kitchen consumables
  • Monitor stock levels and reduce waste
  • Control food costs and maintain target food cost percentages
  • Conduct regular stock takes

Hygiene, Health & Safety

  • Ensure compliance with food safety and hygiene regulations
  • Maintain clean and organised kitchen areas
  • Ensure correct storage, labeling, and rotation of food
  • Manage pest control and equipment cleanliness

Quality Control

  • Check food quality, portion sizes, and consistency
  • Handle kitchen-related customer complaints professionally
  • Ensure special dietary requirements are followed

Administration & Reporting

    • Keep accurate kitchen records (stock, wastage, temperatures)
    • Report maintenance issues and equipment needs
    • Assist with budgeting and cost analysis

Requirements

  • Culinary qualification or equivalent experience
  • Food Safety & Hygiene certification

Required Skills and Experience

  • Proven experience as a Kitchen Manager, Head Chef, or similar role
  • Strong leadership and team management skills
  • Good understanding of food costing and stock control
  • Knowledge of health, safety, and hygiene standards
  • Ability to work under pressure and meet deadlines
